Secret-splitting algorithms allow you to divide your plaintext message into several files, such that all of the files (or some subset of them) have to be recovered before the plaintext can be reconstructed. Just use a different encryption algorithm and/or different channel for each file, and you force the attacker to tap all the channels and crack all of the encryption systems you use. Secsplit, a command-line application for splitting files using Adi Shamir's protocol, can be found at the University of Milan FTP site and at the Optiva Bank's Zerblatt site. For anonymous remailing of e-mail messages, Mixmaster offers the most secure system available.
